Pancakes

Ingredients:
200 g Plain Flour
1 pinch Salt
1 Egg
250 ml Milk

Method: Sift flour and salt into a mixing bowl
Make a well in the middle of the flour, Add the egg
Stir in flour gradually from the sides, Adding milk a little at a time
When half the milk is used all of the flour should be moistened
Beat well to smooth and lighten
Add remainder of milk gradually mixing constantly
Set aside for an hour before use

I have 24 eggs.. about 6kg of flour and 6 litres of milk.. the question is how many pinches of salt do I need? is it a 1:1 ratio of salt pinches to eggs ? With your answer, please bear in mind the fact I have shovel hands - this may effect the size of a pinch.
